Using Einkorn flour for gluten sensitivity

This is some serious flour. It is wheat but doesn't cause the gluten sensitivities that people complain about.
I started using this flour from Tuscany (Italy) because they don't use chemicals on their wheat.
The flour is called Jovial and is Einkorn imported from Italy, found at Haars Health Food store on Delsea Drive in Vineland NJ. I follow the recipe on the bag and vary it slightly from pizza to bread to Stromboli rolls.
This bread I made was using the exact recipe for pizza dough, I let the dough rise about 1 hour instead of 2, wet my hands and formed 2 loaves, placed on parchment paper and baked at 500 deg for 30 mins. The secret for a crispy outside crust was adding 6 ice cubes in the bottom of the oven about 5 mins into the 30. The end result was a dense and crispy outside with a nice soft inside. My boys ate all the bread with red sauce and pasta.
I knew it was good when the boys bug me about pizza night every week. I highly recommend this flour for all your baking needs.

Dr. John's Lamb Kabobs

Nothing says good eating like Fresh Lamb kabobs. Who doesn't like eating street food off a stick? This is so easy to do and I will share with you the "How To".  Don't fear the Lamb it's not a scary meat to cook, the flavor is fatty and better than beef a more meatier taste. The key word is good taste when it comes to grilled lamb or any cooked lamb for that matter. I had a great teacher when it came to cooking lamb, he said keep it simple and let the lamb shine through.  Start with 5 lbs of cubed lamb shoulder from the butcher, you can use leg of lamb if that is not available. Cut your lamb into more manageable cubes if too big so they cook more evenly. Soak your wooden kabob sticks in water so they don't burn up or use stainless steel skewers. Place a cube then a cut of onion, then a cube of pineapple then a cube of lamb then a red or green pepper then another cube and so on.
Listen, put what you want on your skewers, the sky is the limit and mushrooms are great as well as squash. just remember things cook at different times so maybe make separate skewers for harder vegetables.  
Season your lamb lightly, no need to marinate or ruin your lamb with a ton of crap. Salt, pepper, oregano.
As your kabobs are grilling turn them every few mins and use the juice of a lemon to finish off the crust. I personally drizzle a little bit of olive oil on my kabobs at the beginning.
Serve over a nice rice pilaf with some Tazitki sauce, I'll save that recipe for another blog entry.

Dr. John's " Mean Green Burger"

What do you do with two large organic heads of fresh kale?
Well I will tell you. We had our first delivery of the Organic co-op on Monday and I went to town.

Start with 2 lbs. of 80/20 ground beef.
1 container of baby bella mushrooms chopped.
2 heads of kale chopped.
15 cloves of fresh garlic chopped.
1 container of soft goat cheese about 4 oz.
Sauté the kale, mushrooms and garlic in olive oil till just about wilted not soft. Add salt, black pepper and crushed red pepper flakes.
Add the sauté mix and the 4 oz of soft goat cheese to the ground beef and mix well. Form into 1 cup patties and grill to perfection.
Don't forget to use some garlic salt or Adobo on the burgers when grilling.
Yields about 6 large honkers!

Dr. John's "Jump Up Pork"

Two of my favorite things are leftovers and Pork. This dish is the remains of grilled pork chops that we had in the fridge. This dish can also be prepared with left over chicken or steak.
Start by chopping the pork into med to small chunks.
In a pan with Avocado oil fry on high turning the pork frequently.
Add garlic salt.
Add a good amount of fresh chopped cilantro.
Add a good amount of your favorite hot sauce.
I usually add the hot sauce at the end when it looks like this, it gives it a great layer of flavor and crunchy texture.
 You can eat this dish with fresh cut onions and more fresh cilantro.
You can also heat up some tortillas and make tacos.
Don't forget to squeeze lime juice on the pork before you eat.

Dr. John's "I'll hate you in the morning" mean mango chicken.

Ohh, summer here lets have chicken. BOORING!
Let do something better, different and down right dangerous.
Start with 3 large mangos, peel and diced
1 red onion diced
4 fresh soft avocados diced
1 large bunch of cilantro chopped
2 jalapeño peppers diced with or without the seeds. ****(this is your last chance to back out !)
2 limes juiced
In a bowl mix all ingredients and add lime juice and mix.
refrigerate for about 1 hour then take out and mix again.
STEP TWO:
You will need to grill 5 lbs of chicken tenders and season fresh black pepper and garlic salt.
Serve chicken over the Mean Mango and enjoy something different for a change.

Dr. John's "Chemical Free" kiddie mosquito repellant.

I know the pesky little skeeters are out and about biting your tender appendages. Your kiddies are crying that they cannot stay outside  because they itch from the bites...
What's a mom to do? Well skin so soft and deet work well but you don't want to be drinking your favorite chardonnay and taste the flavor of chemical Deet do you???

Well I have the answer and a great paring for your favorite libation.

Go to Haars Heath Food store on Delsea Drive in Vineland and purchase Vanilla Extract.

If you purchase pure vanilla extract make sure there is no sugar or corn syrup in the ingredients.

Dab the pure vanilla on your skin and your bulletproof.

Also add 1 tablespoon to 32 oz of water and place in a spray bottle to mist your self and clothing.

Other repellants are Tea tree, lemon balm, citronella.

Dr. John's Succulent Summer Squash

This is a great summer dish. You can fry this up with scrambled eggs or all by it's lonesome.
Here is the skinny on this yellow squash dish:

Chop up about 4-5 yellow squash with skin on.

Sauté in olive oil  garlic  and onions.

Add salt and cracked black pepper as well as some crushed red pepper flakes.

You now have a healthy meal that is low in Saturated Fat and Sodium, and very low in Cholesterol.
It is also a good source of Protein, Vitamin A, Thiamin, Niacin, Phosphorus and Copper, and a very good source of Dietary Fiber and Vitamin C.

Dr. John's Savory Cauliflower Salad

This is such and easy dish to make.

Begin with 1 head of cut cauliflower.
Boil for 8 mins and drain.
In a bowl add olive oil and red wine vinegar.
Season with salt pepper and oregano.
Mix and chill for 2-3 hrs.
Serve cold as a dish or a side.
Enjoy.
