This is a great summer dish. You can fry this up with scrambled eggs or all by it's lonesome.
Here is the skinny on this yellow squash dish: Chop up about 4-5 yellow squash with skin on. Sauté in olive oil garlic and onions. Add salt and cracked black pepper as well as some crushed red pepper flakes. You now have a healthy meal that is low in Saturated Fat and Sodium, and very low in Cholesterol. It is also a good source of Protein, Vitamin A, Thiamin, Niacin, Phosphorus and Copper, and a very good source of Dietary Fiber and Vitamin C. For over 2000 years this mushroom tea has helped in detoxification of the liver, adding glucosamines to the body which help repair the joints and its cartlidge and acting as a powerful probiotic which helps in fibromyagia and common bowl problems. You can make this up an take this to work for lunch the next day. The dressing can be added and chilled or left off till you eat this delectable treat.
Start with a bunch of fresh Kale rinsed and remove the stems. Add: 1 Fresh mango diced 1 cup of soft goat cheese (Feta) 1/2 cup craisins 1 cucumber diced and peeled 1 sweet onion diced 1 cup of cooked Quinoa *** ADD grilled shrimp or chicken for an extra bit of Bazinga! Salad Dressing: You can use what ever you want as a dressing for this. I use a Vinaigrette dressing 4 tbs. of champagne vinegar 1Tbl. of Dijon mustard 1/2 cup of extra virgin olive oil or avocado oil Sea salt and cracked black pepper to taste Make sure to shake the mixture well to blend all the flavors.
